So one common element in Demon Hunters is that they all have an inner demon whose heart they consumed and gained power from.
I've seen a variety of demons and their effects on the Demon Hunters who consumed them, such as the Demon Hunter who are a Felhound and is now a good boy (I laughed, it was great).
What demon did your character Chow down on and what powers or traits did they gain from it?

I personally go with the Fel hound, as my demon hunter is a scout in the Illidari, and the skills from the felhounds help her track demons easier, as her senses are more enhanced from the felhound’s soul.

Xavander internalized the demon soul of an ancient Satyr prince, who had independantly chosen to ally with Illidan's cause. Initially, Xavander wasn't even a warrior, much less a Demon Hunter. He was one of the attendants serving at the Black Temple, and the Satyr prince befriended him there. When the demon was mortally poisoned beyond hope of a cure, Xavander volunteered to be a host for his soul.
It is less a theft of the demon's power, and more of a voluntary symbiosis. Not every Demon Hunter comes to their role by the same path, or on the same terms, as Illidan (who did it accidentally, in ignorance - choosing it deliberately is different).

It's a really fun element that DH's have specifically for themselves. It's really easy to go wrong with it, but also can make a DH a lot more interesting too.
Mine ate a succubus heart.
I RP her inner demon being more persuasive and convincing than most, causing her inner struggle to be a lot more intense. Succubi are tricky, and this succubus has a lot of sway over her. In terms of how she's changed? A huge sadomasochistic streak, as well as a very solid command of shadow magic. She uses a healthy mix of fel and shadow instead of heavily relying on fel.
That skill represesents itself mostly by her special glaives and an empowered Darkness spell that she can maintain for longer and cause to radiate from -her- rather than just a spot on the ground. I use the purple shadowflame warglaives from the mage tower. If she hits someone with them, the contact is harmless at first, no burns or physical cuts. After a second though, a lot of mental/psychic damage. I imagine being hit by her glaive is like being hit by a shadow priest's mind blast, and it might cause some pretty disturbing hallucinations to the person hit by them.

This character and his partner in goofing claim to have eaten incubi despite us never having seen one in game. It's unclear if this is true or if they're toying with people.
Quin has made his glaives into flails of sorts, with tethers on the hilts which he's actually able to toss at people and swing from a distance.
His partner Xerathrin has altered his glaive hilts to hold a spell crystal powered sidearm he can discharge. He's a tinkerer and wears goggles over his blindfold for what is likely purely cosmetic reasons. Usually he powers them with Light charged crystals. This means if he is in close combat with a demon and they have locked weapons he can discharge light at point blank.

Mine consumed the succubus that stole the heart of her only friend. Edgy I know but there is more to it than that.
At first I played with the idea of the demon within having a more direct role. Intrusive thoughts and stuff like that. I didn’t really like the way that played out, so instead it is more personality shaping. Before becoming a demon hunter, she was rather broody and consumed with the fate she had been cast. She wanted, in some way, to still serve her purpose, but struggled to find a way to do that in her current state.
However, the demon heart changed her. She has become more volatile as the forces within her conflict for dominance. The succubus warped her personality, making her more coy and flirtatious, without any desire for courtship. It made her a touch more perky and hyper. However, it is in constant conflict with the nightmare she sought to suppress with the demonic conversion, which has put a toll on her mental state.
At her origin, Tinkahra wanted nothing more than to protect Azeroth’s dream. She saw all others as threats to it, and never fostered any like towards druids or the mortal races. She was cold to outsiders, but very compassionate towards her own kin and the denizens of the dream. At her fall, her brush with the nightmare, she became very depressed. Stuck in the form of the very creatures she despised, she couldn’t figure out how she could still serve the dream. She distanced herself still from the elves, but still needed them to survive. She found that the nightmare’s touch was not strong enough to fully corrupt her, but the thorn fully absorbed into her left shoulder and turned the skin to a bark like black area. If she focused and avoided touching the dream or using her powers from it, the nightmare’s spread was a slow crawl. Overtime, she started to warm up to one elf male, a merchant. Who then died after falling prey to the succubus.
Tinkahra nearly ended it all then, as by that time the nightmare had spread to her ribcage on the left and down her left arm to just above the elbow, but she heard a rumor from a traveling merchant. About demon hunters. She passed the trials and at the heart of the very succubus who took him from her.

Like various others I initially chose a Sayaad as Theara's Inner Demon. I wrote her as possessing a variety of traits skills and behavioral influences from it. She's rather sadistic, or more accurately sadomasochistic, situationally seductive and uninhibited. She also inherited a portion of the demon's knowledge, allowing her to create special concoctions to alter other's perception, disposition, sensitivity and pain threshold. Currently she uses an altered version of one such concoction as a perfume, meant to improve people's disposition towards her and make them more willing to answer questions should she need it.
She's also inherited some physical traits including spikes along her lower calves. The particular shape of her horns are also part of it, along with a relatively slight alteration of her voice. Her demon form possesses a couple more Succubus traits, though not many.

I've been leaning towards Wrathguard, mostly for aesthetics and the feel of a frothing berserker in combat. The other idea I've had is a felguard, to sniff out the magic contraband. Literally. In addition to possibly having some other canine-esque habits.
Sayaad. However, I did lean on the role of saboteur more than seducer, and as such Kathiane is less seductive than she is everyone's best friend. She's an Illidari diplomat, if such a thing were possible. Originally she smoothed out discord between the Naga and the Broken, now she works to keep the Illidari viewed positively by the average Horde citizen.
Pyrano here bound a shivarra. An aspect central to the character is a lack of faith (in himself), and how his journey to be a hunter, was a journey in his acquiring faith, and confidence in himself. Felt fitting to bind a demon of a species known for faith and charisma.
As for powers, the character was a spellbreaker techie type, who was actually kind of terrible compared to his peers. Through his journey, he's gradually improved, and the shivarra aspect has greatly helped his blade skills.

Before Rialius became an Illidari, he was a priest. In Inquisitor for Quel'thalas, he used his mind abilities to heal others minds, and to rip the truth from the wicked.
As an Illidari he consumed a Legion inquisitor, the floaty eye summoning bastards. He basically out inquisitored an inquisitor for inquisitorception. Rialius can summon many eyes, eyebeam with them, and float. It brings new meaning to the phrase "giving someone the stink eye."
As an ordained priest, he can also do Illiweddings and stuff.

I sort of head-cannoned mine to have consumed perhaps the only Aldrachi demon, the species that possessed the associated warglaives. This resulted in the pretty unique demonic form that DH's get as tanks.
We don't know much about the race, as it was said that Sargeras annihilated all of them when he couldn't convince the remaining ones to turn, but we know they were a warrior people with incredible fortitude, hence their ability to withstand the Legion. Every race that has faced the Legion has had traitors in their ranks however, and the particular Aldrachi that my DH consumed was responsible for the downfall of their world, when he gave up critical info to the Legion in exchange for demonic ascension - he thought he could rule his people when they at last turned to demons, but they all preferred death.
Before becoming a DH, Mukotsu was a paladin in the defense of Silvermoon, but like much of his people his faith was crushed when the Scourge trampled them, and he willingly answered Kael's call for Illidari recruits to gain new powers that wouldn't fail him so he could avenge his family against the demons. The Aldrachi soul within him hardened his outlook even more than it was after the destruction of the Sunwell. Not hardened in a desolate, nothing-to-lose way though, but in a grimly determined way. The Aldrachi had in a way tried to save some of his people, but instead had to watch them be destroyed for rejecting the choice he tried to make for them. Mukotsu learned from him that although his people were decimated, they are not lost, and though they may not accept what he became, that doesn't mean he can't still protect them.
The Aldrachi within was always bitter towards the Legion for destroying his world despite the sacrifice he made to try and save it. He became fully fel-corrupted by his inner turmoil over this choice, and would try to taunt Mukotsu to make the same one when the Legion came for Azeroth. They both have learned from each other, however, and the demon eventually came around and became a great source of knowledge against the Legion and a partner to Mukotsu who wants to see his people protected even though his own world is gone.
In the event I get pushback for this backstory, the alternative demon consumed is an Eredar, in fact the former brother of my LFD priest, just to make for some more drama between them.

I am loath to defend the IC, but I have to say I have answered discussions ic and ooc. Many flip. Depends on the question and answeree but some are great to do an IC response for.
I may do the initial answer IC and add either an ooc bit or respond/discuss ooc.
This Demon Hunter took in a Fel-Bat to increase his audio and sight via echo-location. Think of him like the Marvel's Dare Devil of Demon Hunters. He'll never see normally again but even those that could escape his spectral sight can't hide from his ears.

This is actually a aspect of DH character building I didn't think of and I'm suddenly ashamed of myself and feeling a great need to write up my DH in more detail now. I main a warlock and the fact I didn't think of my dh's demon makes me want to go back through lore and see what I could figure out to fit her personality. I have much enjoyed reading over these though and the reasons / changes others have posted. ~thumbs up~

I didn't know what Rialius' innder demon was when I started him. I knew what the other DHs I play have but not Rialius. My brain didn't connect the new demons we see in Legion with something our guys could have absorbed. When I finally considered it, the Inquisitor vs Inquisitor thing fit.
It's just additional character development we can do.
My characters' partner and I actually did some RP in Rialius' mind's eye after an episode of PTSD caused the demon to take over for a time.
Basically Rialius was about to do something stupid and after Argus the demon isn't sure of their immortality anymore. The demon wants to keep living so he proceeded to take over Rialius. He tried to act completely normal, goes to the bedroom he and partner are staying in, kiss the partner (who he is terrified of because they vowed to kill each other if they lost control to the demon). The demon takes a relaxing bubble bath (self care), then seeks Rialius' brother (who they are living with, said brother is also a mind specialist priest), and says, "The host's mind is broken. Fix it or I will make you suffer a fate worse than death." (The brother is annoyed more than anything.)
Demon controlled Rialius used scented floral bathing stuff that real Rialius hates. It was given to them as a gift so they were keeping it in the bathroom. Rialius' partner noticed the out of character behavior and followed him.
We wound up with Rialius, the partner, and their inner demons in a mind space together. Apparently the inquisitor demon is a bit prissy. We got to see what he looked like before he was corrupted by the Legion (which is headcanon stuff).
In the end Rialius was able to come out of his fugue and regain control.
It was the parallels between Teldrassil and the fall of Quel'thalas that was his trigger.
