Gonna try my hand at cooking some salmon tonight. With some rice and a Spring Mix salad with matchstick cut granny smith apple and candied pecans for dinner.
I’m doing a boston butt roast in the slow cooker with onions, red potatoes, and carrots.
I have chicken schnitzel and broccoli with hollandaise. Must be fancy food day today.

4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
4 (4 to 6-ounce) pieces salmon
1/4 cup sliced almonds
1/4 cup purchased pesto
2 tomatoes, sliced
Preheat the oven to 400 degrees F.
On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.
To serve, place each piece of puff pastry on a plate. Top each puff pastry with 1 tablespoon of pesto. Top the pesto with 2 slices of tomatoes each. Top the tomatoes with the salmon and serve.
Made some carrot jalepeno soup yesterday
6 large carrats grated .
1 1/2 jalepanoes 1/2 seeded or not.
1 large onions dices i prefer small
2 cans of creme of ckn 1 can of creme of celery
3 cans of milk
1tbl butter
sautee carots and onions
add creme ckn/celery
add milk
simmer for 30 and enjoy.
Other than the amount of carrots, that sounds delicious.
By all means u can use as much as u want or little also the type of peppers is up to you.
I’ve been celebrating the end of summer (and hopefully last really hot day of the year) by turning the AC down. I usually keep it around 76, but we’re going crazy and bumped it down to 74; I tried 72, but that was just too cold.
We’re at 95 today, though tomorrow and Friday will be in the 60s. Just in time for autumn to arrive.
We have the same weather. Right now, it’s 85 and gosh darn humid. Tomorrow will be 62. A line of storms just rolled over and dropped a ton of rain. Except here we got a few drops. I’m cursed. I feel like we are in Steven Kings bubble. No rain for you.
