To bad you don’t have Tommy’s there. They have a promotion going thru Thursday for a b1g1 chili cheese burger.

My new fave phrase … “tummy whelplings”. I shall refer to it if my Dracthyr ever gets anxious, lol.

Gonna try my hand at cooking some salmon tonight. With some rice and a Spring Mix salad with matchstick cut granny smith apple and candied pecans for dinner.

Pickled bologna and Pinconning cheddar here.

4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
4 (4 to 6-ounce) pieces salmon
1/4 cup sliced almonds
1/4 cup purchased pesto
2 tomatoes, sliced

Preheat the oven to 400 degrees F.

On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.

To serve, place each piece of puff pastry on a plate. Top each puff pastry with 1 tablespoon of pesto. Top the pesto with 2 slices of tomatoes each. Top the tomatoes with the salmon and serve.

I’ve been celebrating the end of summer (and hopefully last really hot day of the year) by turning the AC down. I usually keep it around 76, but we’re going crazy and bumped it down to 74; I tried 72, but that was just too cold.

We’re at 95 today, though tomorrow and Friday will be in the 60s. Just in time for autumn to arrive.

We have the same weather. Right now, it’s 85 and gosh darn humid. Tomorrow will be 62. A line of storms just rolled over and dropped a ton of rain. Except here we got a few drops. I’m cursed. I feel like we are in Steven Kings bubble. No rain for you. :weary:
