Today is the pulled pork we did on the smoker the other day. We did a few hours on the smoker and finished it in the oven. Today is sauce it up and reheat it. I hope it’s good.

My husband had the week off and decided to replace the outdoor lamp post. The old one was 40 years old and was very wobbly. Trying to dig in the ground was challenging. The dirt is rock hard. We finally got the post hole to 20 inches and there is no water in the soil anywhere. Finally, the new lamp is up and waiting for dark to see what it looks like.

Funny, today was pulled pork at work. I was off Thursday so asked the boss to brine it. So she taught somebody else at the same time.

Apple juice to tenderize the pork shoulder. Minced Garlic, salt, pepper, onion powder, paprika, some cumin, and brown sugar.

We let it sit like that overnight and I put it in first thing yesterday at 5 am, nice and low. Took it out at 1 pm, and shredded it real fast while it was hot. Took some of the juice and poured it back into the pan, covered the meat, and put in the fridge. Today, as I diced 25 pounds of cabbage to make Coleslaw with, I put it back in the oven to warm it just enough to loosen the meat and release any fat that was in the juice back to liquid.

Pulled it out, threw in the BBQ sauce, added a little garlic powder, salt and pepper and boom. Money.

Threw in the oven to heat to temp and called it a day.

We sell pork snitzel at costco in a box i know i know but didnt feel like skip the dishes or cooking so pop in the air fry and now waiting on the results.

Breakfast fritata is done. Ribs are in the oven for the next four hours. They’re going to be fabulous. I have a couple sweet potatoes that I’ll cut up and make into fries.

Sweet Potato Fries with Sriracha dipping sauce
2 tablespoons olive oil
1 teaspoon sriracha
2 large sweet potatoes, cut in large batons, approximately ¼-inch-by-2 inches
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon paprika
1 teaspoon salt
1 teaspoon freshly ground black pepper

Sriracha Dipping Sauce
Makes 1 cup

1 cup sour cream or Greek-style yogurt
1 small garlic clove, minced
1 tablespoon freshly squeezed lime juice
2 teaspoons sriracha, or to taste
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Preheat oven to 425 degrees.

Whisk olive oil and sriracha together in a small bowl. Pour over sweet potatoes in a large bowl and toss to coat.

Combine cumin, chili powder, paprika, salt and pepper in a small bowl. Add spices to potatoes and toss to coat. Arrange potatoes in one layer on an un-oiled baking sheet.

Bake on the lowest rack for 10 minutes. Turn potatoes with a spatula and bake for 10 more minutes, or until golden brown on all sides.

While potatoes are cooking, whisk dipping sauce ingredients together in a small bowl.

Remove potatoes from the oven and serve with sriracha dipping sauce.

(I promise - it’s not as complicated as it looks)

Y’know, I haven’t really been checking in on them for a while. How’ve they been doing? Hopefully no longer the punching bag of the rest of the sport!!

They still are the punching bag. Everyone here just loves the new coach. He’s quite a character. For some reason the fans are really pumped up this year. The stadium has sold out with standing room only for the last two games. The sound from the crowd is impressive. :dracthyr_yay_animated:
