Restaurants are all closed again. We are going to get a PFChangs take out. Going to try the Peking Duck special they have going on.

yeah, they just do take-out/carry-out, delivery or drive-thru here too.

That wasnt what i was expecting from episode 6.

I was expecting it at the end of the last one. It’s looking like one heck of a season finale is being set up.

Wonder if anyone else thats force sensitive will show up.

Rumor has it that Dawson went in late to shoot something a few months before the season started. Which was well after they already filmed her. It’s possible that it was touch up work. But I doubt that they will only use her for episode.

They can bring in existing characters from any number of sources or create new ones. Both the lead character and his charge are new.

Croc pot has been going since 430 this morning. Two pork loins seasoned to the gills. House smells great. Just grabbed some tongs and a fork and shredded it all. A generous amount of Head Country BBQ sauce (yum) and bam. Pulled pork. It’s what’s for dinner. Have some fries going in the oven to go with it.

Watching last night’s Critical Role, however we will see how far I get with it. Mulan hit Disney plus today sans paying for it. Think I might want to check that out tonight as opposed to knocking this bad boy out.

Next time you want to do pulled pork…

Bánh Mì
For the pulled pork:

  • 2-pound boneless pork shoulder roast
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 1 jalapeno, diced
  • 1 2-inch piece of ginger, sliced thin (or 2 Tablespoons minced Ginger)
  • 8 cloves garlic, minced
  • 3/4 cup soy sauce
  • 1/4 cup white vinegar
  • 1/2 cup brown sugar

For the pickled carrot:

  • 1/2 cup distilled white vinegar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups coarsely shredded carrots

For the picked onion:

  • 1/2 cup distilled white vinegar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 medium white or yellow onion sliced really thin

For the sandwiches:

  • pickled carrots (above)
  • picked onions (above)
  • 2 long baguettes cut in thirds or 4-6 small rolls, split lengthwise
  • Sriracha Mayo (about 1 part Sriracha to 2 parts Mayo)
  • 1 English cucumber, thinly sliced
  • 1 jalapeno, thinly sliced
  • 1 cup cilantro leaves
  • reserved sauce from pulled pork
  • hot sauce

Directions:

Season the pork shoulder with salt and pepper. In the insert of a slow cooker, stir together the jalapeno, ginger, garlic, soy sauce, vinegar, and brown sugar. Nestle the pork shoulder in the liquid. Cover and cook on low for 8 hours or high for 4-5, until the pork is very tender, rotating once during the cooking process if desired. When the pork is ready, shred the meat. Strain and reserve the sauce, skimming any fat if necessary.

Make the pickled carrot and onion: In a medium glass bowl, combine the vinegar, sugar and salt and stir until dissolved. Add the carrots and let it sit for about 30 minutes. Drain well and refrigerate until ready to use. (follow the same for white/yellow onion).

To assemble the sandwich, slice the baguettes or rolls in half lengthwise. You can also toast them briefly for a better crunch (depending on your baguette). For more room, use your fingers to hollow out the baguette some (save the bread for croutons or something). Spread a thin layer of mayonnaise (we spiked ours with Sriracha) on the bottom half (both if you’re a condiment fan). Top with the pulled pork, cucumber, pickled carrots and onions, and sliced jalapenos. Drizzle with reserved sauce and hot sauce. Close the sandwiches and enjoy.

I have a barbacoa recipe, too, but this is enough to get your taste buds going…

Oh I do want to pickle some carrots. I LOVE pickled carrots and pickled onions. Can’t stand pickles though haha
