Kind of wish more people were on east coast servers for time sake. Has anyone seen any decent population on East coast cluster or just dead all around compared to West coast?

What server ruleset/faction are you looking for? My guildies play Horde in the 5-realm PvP East Cluster. It holds Benediction, Faerlina, Heartseeker, Incendius, and Netherwind.

looking to just play normally. Was looking at making a toon on Sulfuras, but it looked pretty barren lol

The “Normal” ruleset is PvE. If that’s what you’re looking for in the East, try the Mankrik cluster:
Sulfuras is a PvP realm. It’s part of the 8-realm PvP east cluster:
There are 13 PvP East realms organized into clusters of 5 & 8. Best of luck!
The east coast PvE server cluster is poppin’.
If you want to play on one of the East Coast PvP clusters, make connections before you roll so you don’t end up marooned on Thalnos.
