Crafting professions - worthwhile?

With the game as mature as it is, are there any crafting professions that are worthwhile? Either for making useful items or even gold?

I mean, Tailoring gives you bags, and Engineering a car, but I’m not sure if Enchanting or Blacksmithing or Leatherworking are worth the effort? Especially with the level scaling that makes raw material hunting no longer completely trivial if I wait until I get a high-level character.

Actually, leveling classic profession to 300/300 has never been easier due to level scaling. Once you are level 20-25, just head for zones with the mats you need, and the zone scales to you. You no longer have to wait until you level up high enough to safely gather the mats you need to progress your profession. Getting raw material to make level appropriate gear is a lot more trivial than it used to be.

For endgame, Alchemy and Enchanting are the most useful for raiding and have a market. Other professions aside from bags, mounts, and specific engineering items don’t have much of a market.

For leveling professions. Gear for slots not covered by heirlooms - waist, hands, bracers, and feet - has a market of sorts.
