Crafting professions to RP a bit while leveling

I mained a Gnome Rogue in classic before switching to a druid in BC/WOTLK because I found I enjoyed healing. I’m planning on having a main that can heal this time around, but I’d also like to be able to wear armor I crafted myself on the way up to 60. Not worrying about whether it will be BiS armor at any particular level, just that I’ll actually have things to wear that can assist in healing in dungeons, that I made myself. I’m probably staying alliance, although my friend group isn’t final on that.

With that in mind, what would you recommend and why:
A Druid leatherworker
A Paladin blacksmith
A Priest tailor

You can do anything you want if you got enough imagination. This guy here was a engie, and a Blacksmith, I did a whole skit with my friend who was tauren Hunter about Arcanite bombs and iron Grenades cost and Efficiency once. I also wrote a story a long while back about how Me and a few guildies in Vanilla, had to go to blackrock to make Dark iron weaps on the anvil and ran into a few alliance groups doing BRD LBRS etc. and it’s a huge battle, in fact my Allaince RP toon is a spin off of a pally who jumped into the lava and bubble hearthed.

RP wise you can do anything honestly so long as you’re a competent writing and know your limit’s and add enough logic and fantasy.

Thanks for the advice, I realize I wasn’t clear in my question. I’m hoping to introduce a pride in crafting ability to my RP. I’m envisioning being out in the world wearing some gear for the leveling spec (for example, feral for druid) that I might have picked up wherever, but when it’s time to say “I will heal as we adventure into the caverns of the Deadmines” I want to be able to go into my bags and pull out at least a piece or two that I’ve crafted that will help my healing abilities. And unfortunately I never had a strong body of knowledge of the crafting professions, and I’m just wondering what class/profession combo would provide me with the most pieces to choose from on my way to 60 to wear when I group up with people.
