I don’t know how to craft lower level items

By lower level what do you mean? Below Dragonflight level?
I had the same problem with alchemy on this new character. I just searched the net for a levelling guide, then (using the list in that guide) got the mats. Opened up my alchemy profession, typed in the name of what I wanted to make, a listing of matches came up, and if I had the right mats, the lower right corner of the alchemy tab said “make all (xx)”. I hit the button and , voila! … watched the chat box to see my level progress. Rinse and repeat for the next item in the guide to take the level further. Somewhat tedious (not much, though) but it worked. At each step, go back to your trainer and see if there are more recipes/patterns you can train for.
