I have a season 1 max level crafted two handed weapon. If I want to max level upgrade and recraft to 675, do I need two season 2 sparks? I have one spark now wondering if I need to wait until next week for another spark to be able to recraft.
Yes, you need 2 season 2 sparks.

Not just the sparks, but you’ll also need the updated crests as well, so you’ll need an S2 Enchanted Gilded.
Thankfully the amount given in Delves should be enough to keep you in pace for when you can craft sparks, so every two weeks you can craft a Gilded anything that’s not a two handed weapon. You’ll need four weeks for the 2H UNLESS you buy Sparks with your vault which will net you two.
Granted, you probably only want to do that only after you’re pretty decked out and the vault becomes less and less useful.

When I recraft my weapon I want to change embellishments. Can I just write over it with a new one?? Or do I need to use the “remover” item first?? 
Ooooooo! Great idea I didn’t know that! I have one spark and will get another half this week, but since my vault was a bust I forgot I can use tokens for a spark. A weapon upgrade would be huge for me this week!

If your changing from embellishment A to
Embellishment B you should be able to just swap The embellishment.
You shouldn’t need to recraft it to remove the embellishment then recraft it again.

You need 2x Season 2 Sparks or 4x Season 2 Half Sparks. That’s 4 weeks for Sparks.
You need 60x Season 2 Gilded Crests. One week of Tier 11 Bountiful Delves could give you 31 Gilded Crests. And you could get 62 Gilded Crests for 2 weeks of Tier 11 Delves.
I made mine last week. I was forced to make one. Before my level 675 Crafted Gun, I had an ilevel 645 8/8 Veteran Gun on first week of Season 2. My DPS improved so much with it as it was an upgrade from my level 639 Season 1 Crafted Gun. I was doing decent DPS at start then suddenly I saw myself at the bottom of the DPS meters with the level 645 Weapon. I looked at the 2 DPSers who outdps’d me, they both have level 675 weapons. WTF?? From then on, I aimed to get mine. And it happened last week. I got a Hero track Weapon while farming for mats for my 2H weapon. I never used any Crests to upgrade it since I would get the Crafted one.
The Crafted level 675 Weapon put me to level 656 allowing me to be invited for +7s that immediately got me to KSM kast week. GG.

When I’m home I’ll have to figure out if I’ll have enough crests to craft a 675 but at least my meh vault this week will get me the sparks! Such good advice thank you on the vault coins as an option!
