Oh, this is a fun topic!
My first thought was Phil Collins covering the Beatles. I had Face Value on CD and my sister’s boyfriend was surprised to see the track Tomorrow Never Knows. I wasn’t aware, at the time, it was a Beatles song and that’s how I found out. 
Since Latherfal posted a cover of War Pigs I felt I had to post the one by Faith No More. I friggen love The Real Thing and this was a bonus track. They also covered the Commodores song, Easy. lol
This was an unexpected and really fun cover. lol

These are songs I think are either better than the original or just as good.

I think this is better than the original but I don’t like Offspring that much. FFDP made me realize this was a sad song. I never realized it was in the 90s because Offspring’s version was so upbeat.

I agree with these.
I love a lot of Pentatonix covers, since that’s what they’re known for (mostly). Too many to name, by PTX and only picking one would be a disservice. I’ll pick two, one from the Avi years, and the other for the Matt years:
