Got my first covenant to 80. should i swap to the others and get them 80 as well? because then i unlock the cosmestics and mounts without having to be in those convents correct or no? little lost on that lol. will i also lose my anima?
It’s a good idea if you want to use titles and cosmetics from all four covenants.
Okay cool wasnt sure if that was the case. do i have to do all the campaigns too? or no?
You don’t have to do the campaigns, but you should do them for the transmog.

You keep everything, but if you swap covenants, your callings get abandoned and you have to pick them up again. The anima stays with the covenant you gained it with.
SO if atm i have 6k anima and i swap without spending it. i will lose all the anime when i swap?
Your anima stays in the specific covenant anima reservoir, however you can get items that “transfer” it, and so you can move it from one covenant to another if you plan ahead.
If you return to that covenant, it will still be there, you don’t lose it. The only thing you’d “lose” is any current active follower table missions, as those are cancelled upon swapping covenants.
It’ll be there when you come back, but you can also buy items with your anima for 1k anima that will transfer the anima to whichever covenant you want. The vendor is next to the Oribos flight master.

"Once you’ve reached a high Renown threshold, you will thereafter be able to freely switch among any of the four Covenants without cooldown or restriction , as well as use cosmetic rewards that you have earned from one covenant even if you are currently a member of a different one. Both the Covenant switching and the use of cosmetic rewards will also apply to alts once the Renown threshold is reached on one character."

Not entirely true if you want to carry your anima with you to the new covenant get some Traveler’s Anima Cache’s allows you to take up to 1000 with you.

When I was switching between covenants on my main to get them all to 80 renown I would go and use the item to get as much as I can for my next one then repeat until all were at 80.

Yeah, getting to 80 unlock’s access to that covenant’s (unlocked) cosmetics regardless of which covenant you’re currently with, for your entire account.
So even if you don’t particularly care right now, you might as well get it done while it’s easy part of current content in case you want any of those mogs or w/e for some future alt
