I have several questions that perhaps players with more knowledge can answer:

Are the Renown 70 flying mounts bound to one covenant? Do you need to hit 70 in each covenant at least once to earn them, or does unlocking one unlock all?

For the mounts that cost 7500 anima and require renown (I cannot remember how much), can they be bought by players outside of the relevant covenant?

Will renown remain as a legacy system for players to go back and get these mounts later?
Covenant mounts are account wide. You have to be a “member” of the covenant to buy them but you don’t have to be a member to use them. Like other rep farms Covenant rep should still be a thing after Shadowlands, you have time.
You need to have a character to at least be Renown 80 (with that covenant) on your account to be able to use the mount or transmog regardless of your covenant you might be playing in.
Example, my main warrior is 80 renown on 3 of the 4 covenants. I can use all Plate transmogs and mounts from those 3. My alt Hunter who has the last covenant at 80 unlocks at least the mounts for my warrior to ride around along with the Korthia transmogs.

You need to hit 70 in each Covenant to learn them. They are account wide though, so you only need to do it once for each Covenant.
No, you gotta be a Necrolord to buy the mounts or the jellycat. And Anima is still Covenant exclusive, meaning that if I’ve got 20k with NF, I can’t spend that with Venthyr even if I swap.
