Why? So you can just counter that by saying that water walking is a new thing and therefore old world zones are of course playable without water walking like you (or possibly someone else) did when someone mentioned Thousand Needles?
FWIW, I dislike using the provided boat in Thousand Needles. I can’t zoom out far enough to have as much visibility around it as I like and find maneuvering it cumbersome, so I prefer to use a water walking mount.
Water walking is a quality of life convenience, yes. No, it technically isn’t absolutely necessary to use in any zone, even BfA zones, for that matter. The game is, of course, playable without any form of water walking at all. The point is that many people enjoy the convenience of having it for leveling characters. Now that convenience is being made a bit less convenient. Any wonder why some folks aren’t in favor of this new system?

I use(d) the stider as my main mount for ALL of my sub 60 characters. All ~40 of them.

What you call short sighted, I call people who can see the forest and the trees. It’s the principle of the matter. If Blizzard knows they can take an inch, they’ll do that until they’ve actually taken a mile.
I’m mixing metaphors, but that’s my concern and why, even though I hate the water strider and would ordinarily like to be able to use another mount as my water walking mount, I’m not in favor of the way this is being implemented. I don’t believe the reason Blizzard gave us for it, and I’m waiting to see when the next shoe is going to drop. Experience in this game has taught me that it’s just a matter of time.
I’d rather protest this system and advocate for a system that doesn’t require anyone to give up anything, a system that actually adds content to the game without any strings attached instead of taking something away first.
