Hiya. I just made a draenei hunter (Avaruu on Bloodsail Buccaneers), and have learned fishing/firstaid/skinning/leatherworking. My professions tab is all kinds of borked, with only the Skinning button showing (on the Leatherworking tab) and all of the rest have empty or overlapping elements.
I reloaded, restarted the client completely, and have 0 addons that touch this part of the UI - and tested with none loaded, but have the same result. I can’t access my Leatherworking due to this at all.

Also experiencing the same issue, as is my mom. For me, a bunch of druid spells, two of which I don’t even know, are showing up.

Similar to yours, though I can’t open my Inscription tab 
So much for making new glyphs for my chars
I finally had time to test this out and even though the spellbook/professions tab are bricked, you can still cast to open the profession. I’ll just make a macro for “/cast leatherworking” in the meantime, you should be able to /cast inscription and it’ll pop open.

So that /cast works to open up a crafting menu, but what about for doing things that are acts associated with the professions, such as ACTUALLY doing archaeology? /cast archaeology only pulls up the interface for that secondary, it won’t actually ‘do the work’ needed for discoveries.
EDIT: Upon closer inspection of the Professions tab (or closing opening again, not sure), my Survey button was located next to First Aid (3 lines down from where it should be) so I was able to drag it to a bar to be able to use it. If it isn’t appearing for anyone else, try making a macro that is just “/cast Survey” and that should work for you.
