I am not exactly sure if their eyes are empty sockets with fel emanating through it and the in game eyeballs they have are simply for convenience purposes or they actually replace those sockets with a Fel crystal or some such? If the first option, I imagine a Demon Hunter with no blindfold must be quite an ugly sight to behold.
More like orbs of pure felfire.
Empty sockets. Their eyes are gouged out and annihilated by felfire as part of the energies in their initiation ritual. The book Illidan really describes it well.

I think it changes from DH to DH, illidan got two jewels in his eyes but some of them got no eyes(burnt, gouged etc…), some of them got two green “eyes” that could be fel crystals.

It’s not part of a ritual, most of them lose their eyes when trying to stop themselves from watching everything the Legion does when they eat a Demon’s heart

Bottom line here is that fel crystals are never mentioned, but I imagine the choice in how they opt to blind themselves is theirs. Orbs of pure felfire seem the most likely thing if they’re really juiced up on fel energy.
Maybe some opt to splash blinding chemicals in their eyes rather than gouge them out, so the physical eyes remain though they are blinded. Others have the knives. Some who think “I can handle the vision” probably end up clawing their own eyes out when they realize they can’t handle it. etc.

I’m only aware of those who have torn/cut out their eyes. Never heard anything canonical about crystals.

I think you confusing Illidan with Xavius, who replaced this eyes with 2 black jewels. Illidan’s were in fact burned out.

Yeah i got confused since theyre “orbs of mystic fire” whatever that means.
They either gouged out their own eyes, or resisted that - and ultimately had their eyes immediately emblazed & transformed into pure felfire orbs anyway, after the ritual they started off blind only seeing various energies and overtime saw blobs of shapes and figures & were told by Illidan that overtime they’ll be able to see as they once did … and more.
It’s still in the cinematics so I’m going with that. There’s also no option for crystal eyes in demon hunter customisation either.

You can probably get away with that by using the no blindfold option and saying those aren’t eyes
