After you reach the first crit breakpoint, it gets weird. Do you want more AoE? More Single Target? Raid? M+? What trinkets are you running? Cause they can all have different answers.
Really, you need to run SIMC under different conditions and find out what works for you. For me right now, after reaching 30% crit, my best AoE stat is Mastery, and my best single target stat is Versatility. Go figure…
Note: It may tell you Haste is trash in most situations, but at least for me, anything under 20% just feels clunky.
Haste to about 22%, then stack crit and then verse. Sim it once you get over 30% crit as verse may become stronger.
