Some people (not me) care about the story, and stupid things being added to the story they like negatively affects the people who liked it.
If you think they don’t make sense then I’m afraid you’re not knowledgeable in the lore.

There aren’t retcons every other expansion, they rarely do retcons. The lore has been fairly consistent, and adding new lore doesn’t destroy it.
It might’ve made sense before VEs were added. It doesn’t make much sense now. Who’s the highest ranking / most lore-important High Elf with Alliance ties in the game today?
Alleria was it, but she’s VE now.
Valeera is a BE, so she’s not even in contention.
I’m still waiting for the high dwarves that Blizz announced awhile back.
