My Orc Warrior has the blacksmithing profession. Everything that he can craft is mail so far since his is progression is still low.
My Human Paladin that I just created has the blacksmithing profession as well. However, everything that he can craft is plate.
I am not understanding what the difference is.
Any ideas?
Low level blacksmithing goes back & forth between plate & mail. The armor recipes start out plate, then at skill level 40 they switch over to mail and you don't get another plate recipe until level 185. Once your skill gets into the low to mid 200's you start getting a more even mix of mail & plate armor.
Not really sure how things ended up like this. In vanilla, nobody got to wear plate until level 40, so that would explain why there isn't much crafted plate armor until you're in the 200's - by the time you could wear plate, your blacksmithing skill would likely be up in that range. But now, with pallys and warriors being able to wear plate at level 1, you'd think they would have plate recipes at all blacksmithing skill levels, rather than have a big gap in the middle.

Make sure you learned everything the trainer has to teach and also scroll down you list as it is possible the "P"late patterns come after the "M"ail patterns.
Though it is likely an issue with plate wearers originally being limited to mail gear while leveling (and mail wearers were limited to leather). When Blizzard got rid of the level 40 requirement for plate, they barely acknowledged low-level blacksmithing patterns as the items were generally only crafted for transmog by that point in the game and better plate drops were readily available from quests and dungeons.
