Update:
Seems like having TripMode installed caused this crash. TripMode installs a custom kernel extension causing a kernel panic when launching WoW.
This fixed it for me:
First uninstall TripMode
After uninstalling TripMode the kernel extension is still left behind. To remove it you need to enter the following into the console:
systemextensionsctl uninstall 78UFGP42EU ch.tripmode.TripMode.FilterExtension
However, for that to work you might have to temporarily disable System Integrity Protection. You can do a quick Google to see how to do that.
After that you should be able to launch the game without your system crashing.
