2000 honor is 5 marks, 1 mark is 1 potion which can be sold on the auction house.
There’s also using marks to purchase old PvP ensembles/arsenals.

what do you do with the mage off hands? disenchant? or vendor as trash gold?

Buy things and sell it.
The potions on my realm go for ~11g each. Vendoring the armor or DE them can go a long way.
Don’t convert to marks of honor. Buy the Victorious Contenders Strongbox for 5k honor. It will contain some marks of honor anyway, some rousing ire, sometimes a dragon shard of knowledge, and a chance for potions as well. That’s going to be your best bet.
I just opened one and receive 2 marks of Honor, 2 primal chaos, and 3 Rousing Ire.

another nub question…i have like 500+ primal choases do those sell or should i vendor them?
weapons are usually the best bang for the buck
Can’t sell them or vendor them, unfortunately. They go pretty quickly if you have epic-level recipes in your profession. The last recipe that I made with them used 50 of them.
