I’m planning to Role Play a Tauren/HM nomad with two gathering professions and was curious which two are the most profitable/fun if we compare the existing three - Herb, Mining, Skinning?
I would think Herbalism and Mining. I have two alts that are Skinners and I don’t see much profit return.
In terms of roleplaying, for Highmountain tauren they get a racial bonus to mining and one of their abilities is called Waste Not, Want Not which (while actually affecting looted meat and fish) seems thematically to work well with the concept of skinning.
Regular tauren get a bonus to herbing. For druids of both races I’d pick skinning/herbing because it feels more in keeping with the naturalist lore behind WoW druidism.
For profit, ore prices (except for khaz’gorite, the rare drop from other mining nodes) have generally fallen through the floor sharply this expansion, whilst herb prices are coming down more slowly (probably due to potions and phials demanding a more steady stream of them). regular skins & scales are cheap but rarer skins, like some of the speciality drops off monsters and lustrous scaled hides, are still worth something, BUT skins & scales can generally be farmed on demand at any of the many knots of animals across the world while obvs with herbs and ores you’re dependent on nodes.

I vote for Herb/Mine as well. It is what I pick with my new chars now.
Also remember that often old mats will sell for more than current mats.
I also like gathering because it gives pretty good experience as you level. Plus as you sell mats while you are leveling you get a feel for what is going to sell in the AH.
If you go for a mix of a gathering profession and a production profession, go with Mining and Engineering. Although Engineering can be confusing, Engineering uses some stuff from Mining. Engineering can be used to make a few mounts, and depending on which specialization you choose down the road, you can focus on practical inventions that can be useful or focus on guns, rockets, and explosive devices.
