Orc. The stun resist is too good. Undead doesn’t really bring anything to the table for warrior.

I want to do both, but figured most likely PVP
if PvP, then Undead

For PvP, I’d have to go Orc. You can already counter fear as a warrior.
For PvE, I say Troll because berzerking is that good.

Orc is always my go-to.
Orc for stun resist.
Warriors have abilities to remove fear already, don’t need undead.
Human for the extra weapon skill.
Google Rankedboost, they have tons of guides for Classic, they list the best classes/specs for PvE/PvP and races as well.

-Undead: Weakest choice. Good for tanking raids vs bosses that fear… not much else. Warrior already hard counters fear. Stuns a much bigger problem for warrior, so I’m not sure why you’d want this over orc.
-Orc: Best choice for BGs. Hammer of justice is the bane of your existence. You can also be stunned for up to 10s by rogues, 3s from enemy intercepts, etc. In raiding, orc continues to be solid thanks to axe skill, although it restricts you to axes.
-Tauren: Good general choice. Most popular for tanks due to health bonus, but not bad to have anywhere. Stun is an extra interrupt or tool vs packs of mobs.
-Troll: If you don’t want to dedicate your life to axes in raids, troll with edgemasters is the alternative. By dropping 1kg and your glove slot, you keep your weapon options flexible. Berserking can also be freely used anytime, unlike blood fury. More swings=rage/windfury. No healing debuff.

Orc hands down. WoTF is nice, but UD warriors look horrid
There isn’t really a bad race for Warrior, that’s a fact.
Keep in mind that PVE stuns tend to ignore the Stun Resist racial entirely, not always but often enough. Blood Fury is basically putting a Mortal Strike debuff on yourself. Add Deathwish to it and you are at serious risk of killing yourself with personal debuffs if not played well. Great race, perhaps the best all around for Horde, but it isn’t roll Orc and win mode.
Undead brings nothing really to being a Warrior except breaking one fear per 2 minutes without being in Berserker Stance. Situationally great, but there ya go. I will point out that there have been a number of badass Warriors who were Undead, A-list Warriors. Laintime, Clinda/Klinda, Geforce
Play what you want. Warrior is a big investment and playing the class well trumps racials.
