I’m a little confused with the lore for Shadowlands, but I was thinking of either a Void Elf Warlock? or maybe an Undead Shadow Priest?

Void elf Death Knight.
Depends on your covenant.
Night Fae get a lot of Ysera and Teldrassil spirit lore.
Venthyr get some Kael’thas stuff.
Bastion get some Uther stuff.
And Maldraxxus is as bout as interesting and relevant as burnt toast.

Undead anything or anything death knight for maldraxxus.
Human paladin if you’re going to be chilling with the angels.
Night elf or troll anything if you’re going the way of the forest.
Blood elf anything for the vampy boys.
I think the “real hero” or nameless adventurer who does stuff in Shadowlands canonically will probably be a Death Knight. It would make sense to me since we are working with the Ebon Blade and Bolvar.
Also works if you go Venthyr, since the job description is supposed to be “I’m here to purge the wicked and make the sinners repent!”
It’s just that those in charge need to be forced to repent a bit themselves
