Hello everyone, WoW classic noob here.
I was wondering what the best Professions are for priest. I plan on playing mainly shadow priest for WPvP and maybe raiding but I am uncertain if I will have the time. I’ve heard engineering is pretty good and can make some cool gadgets; however, I have also heard enchanting and tailoring. What do you think?
Basically for anything PvP you want Engineering. It just adds a whole new layer of skill and utility to the game.

Ok, what pairs well with engineering?
Mining pairs best with engineering since most engineering crafts require ores/bars.
That said, Herbalism also works because, late game, herbs sell better than ores/bars because raiders always need potions/elixirs/flasks.
If you are only going to play shadow, primarily for PVP, then Mining/Engineering is perfect for you.
If you will be healing PVE at all, you should consider going Tailoring/Mining. There is a robe you can craft at 57 that is arguably BIS until Naxx. It’s BOP so you can’t get someone else to craft it for you. Once you craft it, you can drop tailoring and pick up engineering. But thats only if you are going to do a mix of DPS and Healing. If all you want to do is Shadow PVP stick with Mining/Engineering.
