If you’re alliance, dwarf is best but human is fine. Elf is garbage.
If you’re horde, either choice is fine. Troll has a slight edge for healing due to berserk but it’s hardly game breaking.
When you read that Troll is better just remember this: Hex of Weakness doesn’t stack with Mortal Strike. Only the strongest debuff effects the target. Undead isn’t about their Priest-Race specific spells but for Will of the Forsaken. Warriors, Priests, and Warlocks can fear and they’re the most popular classes. So unless you’re grouped up with a Shaman for Tremor Totem or a Priest who isn’t feared as well then you’ll be feared until you’re dead.
