The hotsauce as a topping sounds a bit strange but I get the desire for a bit of spicy for it to compliment the bacon.
I personally have made something similar. The difference is that I mixed in maple syrup and a pinch of cayenne pepper instead of going for straight vanilla.
Homemade Ice cream definitely tends to taste better in my experience.
My favorite ice cream is a mint chocolate chip using peppermint extract and dark chocolate

walmart makes a rootbeer float icecream that is also pretty good
There’s a local ice cream store that sales
Hershey’s Ice Cream and the best flavor they’ve had to me is Blueberry Cheesecake.
The best for me is Blue Bell Cherry vanilla.
The best ice cream I ever had was on a trip to New Orleans. I was at Bayonna and the daily special dessert was fresh peach ice cream and it was omg to die for.

About 15 years ago Wall Drug SD, the most delicious black raspberry hard ice cream.
Not sure the company but the place closed, Espresso chip. Deep rich cappuccino flavored icecream with mocha crunchy chips.
Although…can’t eat ice cream anymore and I’ve sworn off all sugar now. 
Can’t eat ice cream? That is a travesty.
Is it a physical inability? Because most things in ice cream actually have a substitute these days and with a proper mix of said substitutes can still taste quite good that fills the same role. Unless you drew the absolutely worse straw involving allergies I think technology can bridge the gaps to create ice cream in at least some way.
If it’s a mental thing then I totally understand and mourn for your loss.

Bacon and cheddar is actually quite good its a mix of sugar and salty. For the others one can’t comment.
Bacon and maple is better than Bacon cheddar tough
strangely, buttered popcorn flavored.
First place, Haagen-daz, Bailey’s Irish cream.
Second place, dulce du leche.
Til the cows come home brand ice cream, fav flavors is no fudgin way and a kick in the peanut butter. yum yum.
Dryer’s used to make these Amazing from custard ice creams. Hands down some of the best frozen treats out there… then one day they just stopped making them 
Though for ice creams id say right now im love with anything Butter Pecan. >.>
Hmmm recently spumoni ice cream which is part of the three course meal they have at The Old Spaghetti Factory.
