There is something going on between WoW Dragonflight on DX12, Nvidia drivers, and bad texture corruption issues.

I am willing to bet you are seeing the same graphical issues as myself and many others are.
To “fix” the issue completely, go into you graphical settings and switch DX12 to DX11. This will prevent the texture problems but be aware that the game does look and run better (more fps) on DX12. There is nothing we can do until Blizzard and/or Nvidia provide a fix but you should know it’s not your computer - it’s the game.
