By default it’s set to “Summon Sayaad”, which randomizes between the Incubus and Succubus.
You can do a quest line to set a hard preference by talking to your minion.

But you can talk to the warlock trainer and pick if you want an incubus, succubus, or for it to be random.

You should be able to talk to your warlock trainer to pick which sayaad you’d prefer. (In fact it should give you a breadcrumb quest to do so when you summon them the first time, but maybe it’s missing?)
To be fair to the devs, warlocks have been asking for this since like, Wrath.

Just for random knowledge, the male version of the Succubus is an Incubus.

Because it’s been split between the traditional Succubus and new Incubus in a single spell. You’ve got a chance to summon either or, unless you visit your class trainer and specify which one specifically you want to summon after you’ve accepted a quest from whichever one you happened to initially bring forth.
On a more personal note, I think the Incubus is dirt ugly. Long head, a mouth that hangs like his whole face is a mask of loose flesh, far too slender on the whole, really just not a fan of it.

I have no problem with there being an incubus option. I DO hate being forced to waste time changing it back to the sucubus. The players who demanded this change (if they even exist) should have been the ones forced to see a trainer, not those of us who were happy the way it was.

I for one was always wondering where the male Sayaad were just like I wonder why there isn’t a female wrathguard model as they are just exceptionally fel corrupted Eredar. Felguards are Mo’arg though and I do wonder are there females? do they just build new ones? are Shivarra the females? if not where are male Shivarra…?
