Do Azerite absorb shields stack? Or azerite traits in general. E.g. if I have 2 pieces of azerite gear with the same trait active (e.g. resounding protection).

Yes, all traits stack. I currently enjoy a 43k shield from my 3x resounding protections
Depends on the trait. Numeric stat values stack. So something like a shield or a stat buff will stack. But the proc chance and max number of stacks or something will not.
