Or are they like Voidwalkers, creatures of the Void considered Demons because Mortals are dumb?
One of the Nyan’lotha Raid Bosses is a Void Terror:
And you can’t deny there are similarities between Observers and Void Creatures. Namely the tentacles and multiple eyes.
Since the veil between our universe and the realms of Light and Void is thinner in the Twisting Nether, the idea that creatures of the Void may wander around in the Nether isn’t too farfetched.
(Creatures of Light probably think the Nether is too icky lol)

Warlocks summon them from weird terrible dark realms. Therefore they’re demons.
I mean we used to have a decently clear answer, but i suppose we’ll just wait for whatever they retcon it into next for more clarification.

Observers are demons, but they’re primarily motivated by witnessing and consuming new types of magic.
I’d imagine some of them would be just as interested in Void, just as easily as they’re interested in working for the Legion or Warlocks who can summon them.
I think “demon” is used as a catch-all term for non-elemental monsters from realms outside of Azeroth. From a game mechanics perspective it makes classification for class skills; summoning, binding, enslaving, etc easier.

This could make sense. Just like how we have ‘UFO’ and alien for everything we don’t know what it is.

Warlocks also summon Voidwalkers, who are confirmed to be not Demons by Blizzard.
