I know people say race doesn’t matter very much, but I was looking at make a LF Draenei Priest and it seems like they’re simply worse than every other race. Then I looked a bit further and it seems like they’re worse than every other race for all classes.
Am I reading this wrong?

You’re not running World First Mythic raids. Play what makes you happy.
Racials really don’t matter, they’re just for flavor. No race will ever make or break your class/spec. So LFD are on equal par with anyone else.
Any chart that ranks them at the bottom is only referring to a 1% or less decrease at the highest end of mythic content for those truly trying to min/max. For everyone else it doesn’t matter what race you are.

And in that way, LFD are awesome. Light’s Judgement is badass.

Unless you’re going for top 1% in the world, min-maxing that deep doesn’t matter.
We had a necrolord paladin competing in AWC yesterday for gods sake.
The LFD racials are bad for healers.
But racials do not realistically matter.

I always loved that set. I wish they’d redo the textures of old sets in HD. It’s just so jarring seeing them on the newer models.
Dwarfs (and DID) are normally my jam. I’ve been eyeing Void elves just because I really hate spell pushback, but otherwise I just don’t dig elves. Because I unlocked LF Draenei at the same time I decide to give them a look, and they’re kind of neat. But their racials all seem pretty sub-par.
Yes, you are incorrect.
I made a LF mage to go fire (I already have a Frost mage and I hate switching specs all the time) and it works great.
It is true that all races on both sides are marginally within the same range so picking one race over another may only give you a SLIGHT edge, but LF are still the best at Blood DK and only behind Humans for Protection Warrior. Plus with both of those classes you get help with Blacksmithing as a profession, so you can make a bunch of your own transmogs or even base legendaries for SL.
That holy blast can be pretty decent in a pinch though.
Actual stats wise this is very true. but here are some huge quality of life differences between the races.
Shadow Meld is one of the best racials for casual and elite players. The Draenei HoT is always handy. Dark Iron Dwarves get a mole machine that lets them travel faster.
Lightforged pretty much doesn’t have any good quality of life features.
I completely agree. As a Druid with Shadowmeld, I am insanely spoiled for QoL. And I love it.

I have one - lvl 60 - DK…she’s not bad. I HATE the way they run tho, it annoys me to no end, lol…
They have one of the best M+ damage racials
Their light beam thing does pretty decent damage
