I thought they lost their immortality after Cata so why do they keep calling us mortals as if they were not?
Mortal is shorthand for “player race” often. They are still remarkably long lived, also. We know some have been around a stupid long time. Like 20,000+ years. To a being that old we all likely look like mayflies. Well. Accept Draenei. Them some long lived goats.

Yes but that was pre cata rejection of immortality, cata to now is but a few years you know so them living 20k + years while they were immortal is kinda moot.
We do not actually… know how long dragons live without aspect blessings, and it seems we likely never will.
They have also divided Mortals and Beings of Magic recently. Beings of Magic lack true free will, while mortals have it. So… perhaps there is something to be found there given the primalists say the dragonflights are slaves of Order.

Also they call other npcs mortals too, not just the playable character.
I wouldn’t be suprised if being even older than the notoriously haughty Elves, and possibly older than the Draenei (but probably not), the idea that they aren’t immortal hasn’t even sunk in.
If you spent 20k years viewing everyone else as mortals a few years wouldn’t change your view.
Especially when you have not only outlived Humans, Dwarves, etc but lived to see them evolve into what they are, see their kingdoms rise and fall, etc And for them, that was yesterday.
