My druid wants the Anzu mount, so I snuck thru the dungeon to his room (had the key to heroic), cleared the room, and see I need the Essence-Infused Moonstone. Looked it up, visited Morthis, no help there, no quest to give. A bit more of research, off to a trainer I go, no help there as well.
So…can anyone give me a clue to obtaning the Moonstone? Swift Flight might be neat.
Do you have 280% flying? That is required to start the questline.
Once you do it should be available at Loganaar (Druid Trainer in Moonglade)
It’s not your original question, looks like Kynsalia has that covered, just wanted to add that for more chances at Anzu, the tanks and healer goodie bags from heroic dungeons have a chance to drop Anzu.

When does this mount become solo farmable by any class, is that in cata?
Currently it’s farmable by tanks/healers by completing dungeons. 
In 4.0 he no longer requires a Druid to summon him. That’s the Cata prepatch.
