Blood Mallet shows:
Prot Pally: Human
Ret Pally: Dark Iron Dwarf
But I can’t seem to find anything in reference to Holy Pally? Anyone know or has a source they go to that would show that?

Bloodmallet doesn’t sim healer DPS.
But the answer for any DPS racial basically boils down to “pick whatever because the difference is far less than simply getting lucky or unlucky with procs or even crits will make”.
Pick racials for utility, not throughput.
As a general rule of thumb for Alliance races, Human are usually the king of utility, but Dwarves are fantastic for Tanks.

If you’re Alliance, be Dwarf or Dark Iron because it is objectively superior to anything else in M+.
If you’re Horde, go whatever because you’re already playing Horde so you automatically have the best racial in the game: having people to play with.

Last MDI I remember a lot of Dark Iron Dwarf Holy Paladins.
Out dpsing the entire group during their Venthyr ability Ashen Hallow.

For Tanks, I wholeheartedly agree. Stoneform is the absolute GOAT Tank racial.
It’s good, but far less impressive for Healers and DPS, cause they don’t get hit with nearly so many debuffs that you can’t cleanse otherwise.

Simply group/raid Holy Paladin. What race is top ranked like Blood Mallet has for DPS classes. Not sure how much more clear I can articulate what I’m asking? Sorry if I am unable to do that for you.
If I was purely holy I would go draenei because they look like BAMFs
