I’ve asked multiple people I RP with and gotten varied answers, so I am just seeking more input.
I’m still a little unsure how aging works for Sin’dorei. Say my character is physically about 18-20 (putting her 60s-70s ish, I believe? Correct me on that too, if I’m wrong, please) would she have been physically a much younger teenager during the fall of Quel’thalas, or has she been physically an adult for a few decades now?
People I’ve asked seem to be split between the belief that elven aging is drastically slowed down from birth onward, and the belief that they age at a normal speed at first and then it slows once they reach puberty.
I can’t remember beans about any official statements but I always assumed it was that they reach deep enough into adulthood like 30 - 40 and then it slows dramatically.

Long lived races mature at the same rate as humans then their aging slows down dramatically.
There’s a line in Illidan where the protagonist notes that he wouldn’t be able to tell if a Night Elf was 20 or 200.

Everyone agrees that Belves, Nelves and Draenei are the biological spoiled brats of Azeroth because once they get to like, 20-30? I think, they more or less age at one tenth the rate of humans at worse, one one hundredth of humans at best.

This, and there are wowhead’s sources in addition: in one of Sylvanas’s short stories she states she was not yet 20 but does not read like a literal child. Valeera Sanguinar is also around her twenties as an adult elf. Tarenar Sunstrike used to go into the Ghostlands to kill undead in his youth, but we know that the Ghostlands weren’t full of undead until about 7 years before he would be saying that, so he would have gone from youth to not youth in about 7 years.
I think the confusion comes from the old RPG books, which stated elves reached physical maturity at 60 or so, but iirc the rpg books have been retconned at this point. That, and as a friend of mine points out, any species that took 60 years to reach full maturity would probably not fare very well in terms of survival.
