I'm not advocating for taking it away. I just want an option, much like straight backs for orcs.
As it stands, it's weird catching Sentinel and Warden NPCs bouncing when they're all supposed to be the serious business type. What's more, with their home about to be burnt down, it's really hard to take them seriously if they continue on as is.

That'd be like taking away a Draenei waggle, it's a staple.
And I'm not too sure how they'd take it out of the NPC animations unless they made it player bounce only.

It's not just a "bounce" -- it's a demonstration of their physical fitness. Fits very well.

Well, to be clear, I'm not asking for them to go back and retroactively take it off all the NPCs. Weird enough you go into a settlement of distraught night elves in the destroyed Auberdine and bouncing priestesses and sentinels right now, but that's past content.
But can you imagine running up to a grieving night elf NPC swearing eternal vengeance on the Horde while bouncing in between? It feels a bit frivolous.

If anything needs an option to turn off the idle animation it's worgen sniffing.

Night elves are amazonian women. Bouncing is just a way to display a form of athleticism. Keeps the joints working. It's also worth remembering from an RP / immersion angle, that likely, the night elves don't actually bounce all the time like they do. It's merely an idle animation.
Your night elf walks up to an npc. You right click. She bounces. You click quests.
Your night elf approaches the grieving woman with a hand extended. Finding her shoulder, she soothes the widow with gentle strokes, speaking in a soft tone, as she declares to right the wrong that befell her late husband. Ensuring the woman was emotionally sound, you take your leave.
The second one is a hell of a lot more likely to what actually occurs. It's like blood elves. "Yes, I'm having a conversa - oh, hell, what's that over to the left." An idle animation in gaming doesn't cross into the actual story being told.

My friend's a gymnast. She bounces regularly before, and after any form of workout, or otherwise. I'm not talking about a display of prowess, or excellence. I'm talking about a literal display of a basic routine, as in the showing that she's doing a basic practice. Night elves are an amazonian, matriarch dominated society.
The fact that you're running around, being a complete murder hobo, and fighting most of the time within Azeroth means stretching and the like wouldn't be uncommon.

It is the one thing that I dislike about female Nightelves and why I've never been able to take them seriously or play one. They're amazing otherwise.

Believe it or not, there has actually been RL research done showing bouncing in that manner is very good for both your joints and balance. I've heard recommendations for people (especially as people get older) to bounce like that several times a day. I wish I had a link to the study I read about....
That said, I had to pitch in the fact that back in 2004 the reason I chose to roll a Night Elf was because I was staring that the character on the creation screen and she bounced and it was so cute. ^_^
I *DO* want to see night elves SMILE AGAIN when they bounce!!! Or smile AT ALL anymore. The character model update took away my night elf's ability to smile, making her disappointingly expressionless.... and without the smile, the bounce loses a lot of its charm.

Could be worse players and NPCs might be like Morrowind where they stand there like rocks and scowl at you all...what outlander... make it quick...I need to go back to standing like a rock 24/7.

But seriously though, the bounce really is a gymnast's thing, as mentioned. Back when I was involved in gymnastics it was one of the things the coaches HAMMERED into us. You bounce. You bounce before you do anything. You loosen up and limber up and make sure nothing is too stiff or tense. You don't run, you don't jump, you certainly don't flip (or engage in the Nelf's case, engage in a combat maneuver) without a bounce to limber up.
The Night Elves are supposed to be incredibly agile, stealthy, dangerous combatants, the bounce just reinforces that idea of "I am ALWAYS ready to jump into action." I remember the first time I played WoW, rolled up a Night Elf hunter, saw her do that bounce and was giddy as all get out because I was going "Oh my gosh, I know what that is! That's so cool, I can't believe they included something like that!"
I geeked out hard over that bounce. I wish MORE races had idle animations like that, which have an actual sensible reason behind them. I actually like the worgen idle animation for much the same reason. If you suddenly had a sense of smell 6 times stronger than the one you'd had before you'd probably be sniffing all the darn time as well!
