I was time walking in mists of pandaria on an alt, and he turned 41, and all the quests I was working on there turned trivial. I had to go back to Orgrimmar and turn the time walking back on. It only mattered to me because I was working towards my Trading Post parrot mount, and trivial quests don’t count for the reward track.
Last I checked, the time walking for adventuring through these older zone went as high as Level 50, I have learned from a friend that it now goes as high as 60. Either way. clicking over to 41 should not kick me out of the time walking.
Are you sure you were in Pandaria timewalking and not just questing in that expansion? If you went there between levels 15-35 you could level through most content with it scaled appropriately but not necessarily be in timewalking. Once you hit level 41 I think the mobs would be greyed out and the quests trivial since you’d outleveled them.

That makes sense to my case, since the character in question is one of my oldest alts, and it had been a while since I had actually brought him over to pandaria. At least it let me bring him back in on timewalking so I can pick up where I left off.
go to orgrimmar, talk to Chromie, choose the timeline you want
