Advice on professions for alt army?

Hey everyone so I made a Pandaren alt army. The only classes I don’t have now is a Demon hunter, Paladin, and Druid since I don’t want to pay to race change them later (Evoker will have more race visages later I assume). This is what I plan on doing

Priest: Tailoring Inscription

Mage: Tailoring Enchanting

Warlock: Tailoring Enchanting

Rogue: Alchemy Engineering

Monk: Alchemy Herbalism

Hunter: Skinning Leatherworking

Shaman: Leatherworking Jewelcrafting

Evoker: Herbalism Mining

Warrior: Blacksmithing Jewelcrafting

Death Knight: Blacksmithing Inscription

I tried to keep the professions lore accurate as well and make sure I had the best classes for gathering professions synergies. Like hunter for skinning and Evoker for both herb and mining since the perception increase and either Warlock or Mage specialize in gathering cloth rather than producing, or I might just put tailoring on my hunter as well to keep it on one character. Monk I plan to have as my main so I did one Alchemy and Herbalism. The lore for it is that Alchemy is like brewing and a brewmaster would want to gather their own herbs, also herbalism would be nice if im waiting in queue. But maybe I should have two crafting and replace Herbalism with Inscription and just fish while im waiting not sure. Any advice on my list, I plan on putting the other three classes on it when they are available for Pandaren which might be a while especially for Demon Hunters.
