This would be the coins that are collectable once per week, at the end of Suggested Content in the Adventure Guide.
This character is set to collect a gold coin and another character a whole bag, but clicking on the prompt does nothing.

I’m having the same problem as you. I have 4 characters left to complete this and receive all the coins and rewards. I get to the page that has the coin and the button to click is there and red looking like it’s able to be clicked. But once you click it, nothing happens, and you get nothing. The quest is still there, just not able to complete it.
I turned off all my addons to see if any of them was interfering with it, but it still does this, so it’s an addon blocking it.
I asked my mother, and my daughter to see if they had characters that also needed to complete the adventure guide coin quest, and they have at least one character that has a coin to collect but like me they cannot complete it.
