Since they removed the option of old models, is there a addon we can download to get them back?

Addon wouldn’t do that and model mods are now banned for exploiting that was tied to them.

And if blizzard catches wind that your model swapping (yes even client side) you get the boot.

No, since that comes under their veto of alternative textures/models(which can get you banned.)
They can’t tell if you are using an add on to display old models, or using one to make honey “Jellys” appear to be 90’ tall neon obelisks. They can only tell you are using an add on which is manipulating the textures/models, possibly giving you an advantage.
So they said, “No.”
If you think about it, this makes sense.
