Blizzard, I’d appreciate so much if you add back this elm as a plate armor, so that Paladins, Warriors and DK’s can transmog a coif.

For me it makes sense plate classes can transmog it, because it is a piece of armor very common to knights and warrios in middle ages.

I can transmog it, but that’s because I got it before they changed the system. Re-adding it would be kinda cool for those who didn’t, though.
It does make me a bit upset to think about how bad Blizzard screwed up the item changes, though. They took so many items that were made for Warriors and Paladins and converted them to Agility instead, screwing over low levels. The biggest offender is low level Blacksmithing. So many items that SHOULD be for Warriors and Paladins (and upcoming low level DKs) are Agility Mail now. But Leatherworking ALSO has low level Agility Mail. I could rant for hours on how stupid that decision was. They should have just made all of the low level Mail into Plate, and then added new Agility Mail for those levels.
They didn’t put any thought into armor changes and blacksmithing.
They should also bring back the High Robe of the Adjudicator.

Not in retail, no. The quest that rewarded it was removed in the Cataclysm revamp, and the robes was not added elsewhere.
They could have added in new Mail that used the same graphics that the Paladin/Warrior stuff used. But the Blacksmith stuff should have all been converted to Plate, especially with Leatherworking getting new Mail armor recipes (which it did).
Thing is, even Mail wearers can wear Leather, because it has Agility on it. Sure, you have less armor and transmog options but it’s still viable. Plate wearers have no option.
They need to bring back some of blacksmith recipes for armor.
