Hi all. Way back when level 60 was max, I had a level 60 cow
Last night I decided to play again, and to my dismay found that my toon wasn’t there.
I was under impression that characters were never deleted. I guess that’s not true? Any way to recover my cow?

Best way is to ask costumer service if they can recover the toon, there have been a problems like this lately.
Blizzard doesn’t delete characters.
Chances are you either deleted the character yourself, or, someone else accessed your account and deleted it. You should be able to recover the character via the character restore tool, but if it isn’t there, it’s possible that the character was too old for said tool. Then your only hope is for a GM to restore the character, but if the character restore tool can’t detect them, chances are the GM won’t be able to find them either.
I had a similar issue. It turns out they changed the login system long ago, and what happened is I had two accounts with similar names: a battle.net account under the current login system, and the old wow account that was inaccessible.
Customer service can fix it.
My original account was taken by my ex (who was paying for my account) shortly before BC came out, so I quit for a few months. I made a new account after BC was released, and finally decided to call CS to see about getting my main character back, though it had been almost 10 years after I had lost her. They said they didn’t have the data for a character that had been gone for that long.
It may still be there. I made a character on a realm back around 2009 in Cata and then didn’t log in on it again for 10 years. The character disappeared from my character list but when I went to the realm and logged in the character was still there. After playing it for a few minutes I logged out and it now appears in my list of characters and realms again.
It is possible your name expired and you will have to give it a new name when you log in.

Definitely talk to a GM. They restored characters not too long ago that I had deleted when Burning Crusade was live and I even gave them the wrong info on 2 of the 3.
They were able to find my Vanilla toon that I couldn’t access anymore because they switched to Battle Net.
Start over…lvl 60 is VERY easy to get to. I’m sure you had nothing of value. Classic items still exist but grey or useless.
