I have a rogue with mining and engineering with the skills nearly maxed minus two plan on taking this hunter on to midnight expansion as a survival hunter. I don’t want to take engineering again but not sure what to take I have fun doing professions so it’s not about making max gold but most use. I need opinions
If you’re like me, an army of alts will be doing every profession. My main gathers flowers, rocks, and fish. It’s also my war bands cook. That way when I’m out playing the game, I’m gathering mats to throw in the warbank so most those alts can progress their profession without leaving the city. you will need a skinner and tailor though, which sucks. I do wish everything that has to be gathered could be done on a single character.

We need more information! Maybe you are sitting on a ton of gold and are willing to buy all of the mats to support your chosen professions. I am an alt army guy with all of them feeding my main with pots and rings and so.
You said that you didn’t want engineering. For me, my main gathers ore and is an engineer who uses the wormhole generator to portal to any zone – far more practical than the mage portals and used a lot.
Maybe (maybe!) leatherworking and skinning and make your own gear but if you are chasing the tier sets then that is moot too quickly if you ask me.

Or if you have Survival Spec in mind you could do Inscription/Herbs for agi staves or Blacksmith/Mining for dual wield 1handers.
Or if you are rich you could skip the gathering and take double crafting.
Otherwise Alchemy is always a good option for any class.
