Is there a way to increase the size of certain menus or fonts in game other than chat? Like the quest menu. I have a cataract in one eye that’s not doing me any vision favors, and i’d like to be able to read some text without having to attach my forehead to my monitor.
Unfortunately, not really. This is a soapbox issue for me and I’ll rail about it until Blizzard fixes it or my sub expires. 
The only way I know of is to use the UI slider under options. This unfortunately will make everything bigger. You will then have to size down the action bars (and not much else is re-sizeable).
Edit Mode Expanded is something I recommend, and Sexymap will make the map different and far less hogging of one’s screen if you go that route.
Bartender4 allows for a lot of customizations and is actively being updated.

My eyesight is going and I’ve found the addon Leatrix lets you increase font size in quest windows. Also lets you mute certain annoying sounds which is SO helpful to my adhd (worgen sniffing 
)
