I was wondering what reasons a nightelf would not be able to be a shaman, or a void elf wouldn’t be able to be a demon hunter? from a lore perspective / game perspective that is. I’m sure theres more i would be able to think of but… rn thats my main two.

Hibernia would never want to be an Albion race and Midgard would never want anything to do with Albion or Hibernia.
Shamanism wasn’t part of Nelf culture.
Velfs were Belfs and those who got turned didn’t have DHs among them. Fel and Void don’t play nice together either. They explode. See: Xhul’horac. If you didn’t beat him in time and he became too infused with Fel and Void, he exploded and killed everything.
Edit to add: those are the current reasons. If Blizz decides to add said classes, I’m sure they’ll ignore any lore and culture and slap on a “because I felt like it” excuse and we’ll move on with our day.
The night elves have an innate connection to azeroth through the world trees. My guess is when they signed up for immortality the pact they made with the winter queen was unknown and their spirit / wisp form is essentially a less dense arthas from shadowlands. Their connection to the spirit world is more constant, but its less powerful and therefore old era night elves would have given up the capability to become a shaman, not to say the generation between trees & wells don’t have that, but they don’t really have ancestors who weren’t so what would they really be calling on.
Void elves would probably turn into surrender to madness shadow priests, morphing into their demon form and once their self is about to be ripped to pieces by the fel they succumb to the madness of the void. Demon hunters are strong because of their convictions in the phase of demons, accepting the void is a pretty weak conviction to have.

Because being a shaman in WoW is about reverence for your ancestors and communing with the spirits (sometimes dead). Nelves were immortal until the end of WC3 when they sacrificed their immortality to defeat the Burning Legion and Archimonde at Mount Hyjal, so that part of being a shaman would be really hard obviously. As of DF, night elves have been shown to be shamans through some of the questlines in the Ohn’ahran plains, so it seems likely that we’ll have them as a playable class one day.
As for void elves not being able to be demon hunters, well, they were added at the end of Legion and Illidan seemingly didn’t train any new demon hunters during the campaign on Argus. I guess none of the existing blood elf demon hunters decided to double dip in the void and fel. One day Sargeras will return, or at least a new leader will be at the head of the Burning Legion, and if Sargy boy returns, you know Illidan will be back to train some void elves and nightborne to be demon hunters.
It is a good example, but I imagine it will be the same thing as void elves having high elf customizations. Void elf demon hunters will be treated as high elf demon hunters in lore, whenever Illidan returns and the story suits Blizzard opening them up to all the elves.
