I’ll echo what others have said in regards to versatile, “low-fantasy” mogs.
More casual/neutral pieces that can be mixed and matched with other mogs to round out a custom ensemble would be great. Not necessarily neutral in color, but simply not so heavily themed that they aren’t able to mesh with anything outside of their own set. The Solemn Watchman’s Garb and the Swashbuckling Buccaneer’s Slops are good examples. Same goes for the new Sky-Captain’s Formal Attire (the boots in that set should prove to be especially flexible). All the different colors of capes and gloves, the different tabards, and the Kalu’ak Boots have been good for this too, among others pieces.
That isn’t to say I don’t want any fantastical outfits though. That’s where the class-specific ensembles can shine. Still, when our characters are “off-the-clock” it’s nice to have something to wear that’s less imposing and more relaxed. For the slice-of-life RP, of course.
As far as a specific item goes, I would love to see a version of the Gossamer Gown in the color that some of the Scholomance Occultists wear:
