How would one open the proper files and copy images for use as wallpaper? For example, in SC Remastered, using the Zerg victory image for wallpaper? Or any of them, for that matter.

You shouldnt ask such a question here… For obvious reasons.
But if you just want the wallpapers big images with artwork they have all over the game. Just google with the image part only, you know the function… not all, but images… And there you will get like most of them more or less. I mean Blizzard has many of them for their promotion, when they released the game.
