If you pick any other DPS besides Sombra and Bastion you should be ok.
Mei is just one of the strongest, but not the only one. Other heroes may not be as strong as her but can still do very well.
Except Sombra and Bastion of course.
talking about scrims mostly but ladder too, its mei every single game, and if you go genji and play moderately well, voila now they have a mei too

I know that feeling too. Though Mei does have her counters. Sadly If a Mei hard counters you, the best thing you can do is counter her back.
Here are some heroes who work very well against Mei:
- Orisa
- Pharah
- Widowmaker
- Zarya
- Ashe
- McCree
While Mei is quite strong, her biggest weakness is anti-CC and long range heroes.

the only weakness is being stupid as mei
orisa is garbage because she got nerfed incorrectly (she needs 900 hp shield, 30% fortify and 5m halt)
meta right now includes dva and mccree why would you play pharah
widow feels awful and doesnt even counter mei unless that mei is an idiot and gets caught lacking
if i see one more person list zarya as a mei counter im committing a small genocide

Yeah, if you’re scrimming, chances are you’ll see her every game. Mccree also pops up a lot, but I’m not too bothered about him because he’s not oppressive and has reasonable options to counterplay.
Realistically, most of the DPS won’t be viable at a time. There’s too many of them. But right now, there are also a lot of them that are pretty viable.
Tracer (To my surprise, and joy), is actually not too bad right now. She completely ignores mei freeze, and can constantly pressure the ana, who is also seeing a tonne of play right now. Heck, even torb is decent.
In ranked, you can get away with playing what you want/are good at, especially if you’re not masters/GM
You guys see Mei? All I see is the same endless garbage of sniper and doom spam.
But her anti-CC still works well against Mei.
To counter Mei, your other DPS can deal with McCree.
I’m sorry but this is incorrect. Mei cannot reach Widow, not even with her icicles. Also Widow is not awful, she can one shot any DPS, Mei included.
Ashe is actually a very solid hero, even without Mercy. This is actually my personal pick for countering Mei.
McCree can counter any hero with enough skill. This is why you see him a lot in FFAs.
Except she does, a good Zarya can outplay Mei. Zarya can output more damage then some DPS heroes which can shred close range heroes like Mei.
You forgot about Symmetra, poor symmetra 
I wish they could do that to Support characters! Anyway… there’s a lot of characters you can play even if it feels you can’t, she’s the most strongest so if you want a better chance to win, sure why not? But you’re not obligated if you don’t want to.
Honestly even with Sym, you can still be somewhat useful to the team.
It’s just that Sombra and Bastion are a guarantee lose.

Even as a situational pick, Sombra is still quite awful.
Sombra and Bastion are the two worst heroes in the game stat wise. Before it was just Sombra but Bastion has joined her.

The trick is to be a bad Genji. They are not intimidated enough to go Mei when I play Genji. Lul.

I’m not saying it’s impossible, but being carried as Mercy with a DPS main is not one of the hardest things to do.
The problem for me is her healing output since every single other character in the game has more than hers, so trading Ressurect for more heals + damage makes more sense.
I mean it can work sometimes but a good team can play around it.
That is the main problem with him, you gotta play around him, which can be a disadvantage. Bastion locks you into a specific comp.
Sadly Sombra has been bad for a very long time. Her winrate has always been very low.
Even her mains agree she is bad. Your better off picking someone else besides Sombra.

However Bastion got nerfed multiple times and 2/2/2 has been added. Plus barrier tanks also got nerfed, as well most other supports too.
Team reliant DPS heroes do not work anymore. This is why Sombra, Sym, and Bastion have fallen out. All these three have low pickrates, with Bastion having the lowest.
