Is there a some thing that can explain me how does the controls work?
I mostly play on PC and I have no idea what all this aim assist stuff is or does

Aim assist is a console exclusive tool that makes precision aiming a little easier when using a controller. What it does it will slow the movement of the reticle/aim point when you are close to an eligible target. Here is an article that gives the best explanation to aiming with controller on console.
