This issue ONLY occurs on Overwatch, it does not occur on any other games, even those that are more resource intensive.
I have tried everything I can think of to fix this and it just keeps coming back, it has affected my ability to play the game as I can crash without warning at anytime.

There are no other clues in the DxDiag, so you might want to chat with the GPU manufacturer or even a Microsoft tech support person. All we can see is the GPU stops taking commands for some reason, then Windows reboots it, which causes the game to crash because it needs the GPU to display the game.
Alright thank you for your help, I’ll attempt to communicate with them.
(Update)
Communicated with the GPU manufacturer, who decided that the GPU is performing as expected. It passed multiple extreme stress tests for various benchmarks and other more demanding games.
They’ve concluded it is an issue with Overwatch itself, and have advised me to keep asking for support within Overwatch
